The story is a genuine accident. In the days of sail, green coffee crossed from Malabar to Europe over months in damp holds, and arrived swollen, faded and completely transformed. When steamships shortened the journey, buyers complained the coffee had changed — so the Malabar coast began recreating the effect deliberately.
Beans are spread in open-sided warehouses through the June-to-September monsoon, raked daily, and left to absorb moisture until they nearly double and turn the colour of old ivory. The acidity is gone entirely. What replaces it is body: thick, musty in the best sense, faintly of tobacco and dark cocoa.
