Chicory is not an adulterant here, whatever the purists say. Roasted chicory root gives filter decoction its body, its dark colour and the faintly bittersweet edge that a straight arabica cannot produce. Take it out and you no longer have filter coffee — you have coffee, in a filter.

We roast the arabica dark, roast the chicory separately, and grind them together to the specific fineness a dabara filter wants: fine enough to hold, coarse enough to drip. Too fine and it chokes; too coarse and the decoction runs thin.

One heaped tablespoon, tamped lightly, hot water on top, and then you wait. That is the whole method, and the waiting is not optional.

  • Decoction to milk is roughly 1:3. Adjust to your household.
  • Pour between dabara and tumbler to froth and cool it.
  • Make the decoction fresh. It goes flat within the hour.
